Brazzein, a protein that is located in a fruit in the western region of Africa, was discovered more than a few years ago. When it was discovered to be sweeter than sugar and have less calories commercial production had started, but when the protein is being purified some of the natural sweetness is lost. Another problem that was presented is that a very small amount is being produced after purification. Recently, a group of scientists have formulated a new way of purifying the protein, and the results were successful. They made 2.6 times the amount that they started with and Brazzein was 2,000 more times sweeter than sugar itself.
